Sun dried tomatoes are a great and delicious classic used in italian cuisine. The flavor of sun-dried tomatoes is quite intense, concentrated so a little goes a long way. Although they are wonderful with pasta, you’ll enjoy using sun-dried tomatoes with many other foods, including vegetables, meats, and breads. How can you combine these ingredients to make a perfect appetizer?
Ingredients (for 20 skewers):
- Sun-dried tomatoes (5 pcs for sauce and 20 for skewers)
- Peeled shrimps (20 pcs)
- Garlic cloves, chopped (2 pcs)
- Parsley, chopped
- 1/2 Lemon sauce
- Cucumber slices
- Philadelphia cheese (160 g)
- 5 tbs extra virgin olive oil
Heat extra virgin olive oil in a large pan over low heat. Add peeled shrimps and after 5 minutes add lemon sauce. Wait till it evaporate and add sun dried tomatoes, chopped garlic and chopped parsley. After 2 minutes take off from heat.
Prepare 20 pcs bamboo skewers. Smoothly spread Philadelphia cheese on cucumber slice and place it on skewer followed by sun-dried tomato and shrimp – full of flavors and juiciness. When you finish all 20 skewers place them on white plate and serve them asap.
