What does EXTRA VIRGIN olive oil mean?

It means that the olive oil was produced by the use of mechanical means only, with no chemical treatment. Extra Virgin olive oil Čok received the certificate EDOOSI ZOP (ZOP = Protected Designation of Origin) issued by Ministery of Agriculture from Slovenia. They check the whole production process each year:

  • OLIVE CULTIVATION (registered ones)
  • PICKING OLIVES (by hand or with the help of mechanical means only)
  • STORAGE OF OLIVES BEFORE PRESSURE (not more than 24 hours)
  • OLIVE PROCESSING IN REGISTERED MILLS (must be the same day of picking, cold pressure, no chemicals and no high temperature durig pressure)
  • EXTRA VIRGIN OLIVE OIL STORAGE (marked and traceable storage containers, temperature, filtration)
  • SAMPLING AND CHECK OF THE QUALITY
  • BOTTLING AND LABELING (Protected Designation of Origin, Registered production, registered labels)
  • BOTTLED OIL STORAGE SPACE (temperature, ventilation)

Does Extra Virgin Olive Oil Čok have any important certificates?

Yes. Extra Virgin Olive Oil Čok received the certificate EDOOSI ZOP issued by Ministry of Agriculture from Slovenia. Protected Designation of Origin (PDO) is the highest form of product protection, where the food product has to meet the quality requirements and typical attributes of a particular geographical area. All the production, processing and preparation processes must take place in the geographical area in question, thus ensuring the consistent quality and tracability of the food or agricultural product. The designation “EDOOSI ZOP” has been entered in the Register of protected designations of origin and protected geographical indications in accordance with the Commission Regulation No 148/2007 of 15 February 2007, which entered into force on 26 February 2007. Extra Virgin Olive Oil is valuable, delicious, and the production process and selling process is poorly monitored. This means fraud is rampant – mixture of cheap oils sold as extra virgin olive oil, less valuable olives sold as a more valuable one, not organic (chemical) production sold as organic one, etc. The olive oil and the production process should be doubble checked. We do it for you.

What does Protected Designation of Origin (PDO)means?

PDO products must be produced, processed and prepared in a specific region (in our case Slovene Istria) using traditional production methods. The raw materials must also be from the defined area whose name the product bears. The quality or characteristics of the product must be due essentially or exclusively to its place or origin, i.e., climate, the nature of the soil and local know-how.

What does cold pressure (extraction) means? Why is it so important?

“Cold” refers to the fact that no heat is added during extraction. “Pressed” refers to the concept that the olives are crushed in a mill to extract the oil. The temperature of malaxation and extraction is crucial due to its effect on olive oil quality. When high temperatures are applied the more volatile aromas are lost and the rate of oil oxidation is increased, producing therefore lower quality oils. In addition, the chemical content of the polyphenols, antioxidants, and vitamins present in the oil is reduced by higher temperatures. The temperature is adjusted basically by controlling the temperature of the water added during these two steps. High temperatures are used to increase the yield of olive oil obtained from the paste.
