Slovene Istria is a region in southwest of Slovenia. It comprises the northern part of the Istrian peninsula, and it is part of the wider geographical-historical region known as the Slovene Littoral. Its largest urban center is Koper. Slovenian Istria is especially renowned for its wines and olive oil. The most common wine varieties are refosco (red) and malvasia (white). What is the characteristic of Extra Virgin Olive Oil Čok from Slovenian Istra?
Extra Virgin Olive Oil Čok from Slovene Istria is oil of superior quality. It is obtained directly from olives solely by mechanical means . It is produced from hand-picked olives of istrska belica variety with cold pressure. Extra Virgin Olive Oil Čok is characterized by a specific, rich aroma wizh favour notes of ripe olives, tomatoes and artichokes. High in bio phenols, which benefit the human body, this oil has a characteristic bitter and pepper finish.

What does Protected Designation of Origin (PDO)means?
PDO products must be produced, processed and prepared in a specific region (in our case Slovene Istria) using traditional production methods. The raw materials must also be from the defined area whose name the product bears. The quality or characteristics of the product must be due essentially or exclusively to its place or origin, i.e., climate, the nature of the soil and local know-how.
What does cold pressure (extraction) means? Why is it so important?
“Cold” refers to the fact that no heat is added during extraction. “Pressed” refers to the concept that the olives are crushed in a mill to extract the oil. The temperature of malaxation and extraction is crucial due to its effect on olive oil quality. When high temperatures are applied the more volatile aromas are lost and the rate of oil oxidation is increased, producing therefore lower quality oils. In addition, the chemical content of the polyphenols, antioxidants, and vitamins present in the oil is reduced by higher temperatures. The temperature is adjusted basically by controlling the temperature of the water added during these two steps. High temperatures are used to increase the yield of olive oil obtained from the paste.
